I have to tell you, these Apple Cinnamon Shortbread Cookies are especially good.
The original inspiration for this recipe came from Heidi Swanson at 101cookbooks.com. But Michele at Cooking With Michele, changed the recipe considerably, and with fantastic results!
So I was inspired. I switched out the brown sugar for 1/2 cup agave and 1/8 cup molasses. (Did you know if you mix 3/4 parts agave with 1/4 part molasses, it tastes just like brown sugar? I discovered that while baking another cookie. I was so excited!)
My cookies didn’t turn out quite as pretty as the ones pictured above, but oh, where they ever good! Not to sweet, but just sweet enough.
To be honest, I’m not sure they qualified for shortbread either. But I didn’t really care once I bit into the first one.
No matter which version of this recipe you bake, you’ll end up with something delicious.
I just love a cookie recipe that evolves.
