Apricot Glazed Stripey Cookies

Oh what a fun cookie! Wouldn’t these Apricot Glazed Stripey Cookies be great for a summer party?

I tried these, and I must say it was a bit cumbersome trying to get those layers together. However, I think my dough was a little more crumbly than it should have been. There’s a good chance I put to much flour into the dough because I got distracted while measuring by my little guy trying to whack the cat over the head with his puzzle. Once I saved the cat for the millionth time that day, I couldn’t remember if I had put in that last 1/2 cup of flour or not. So I added it, only to question my decision later on when the dough was falling apart.

But I pressed on, and ended up with cookies that looked just like they were supposed to. They were crumbly, but tasty. Had I not added that last 1/2 cup of flour, I think they were have been perfect. I could have made ice cream sandwiches out of them just like the recipe shows. But I guess I can’t be a perfect baker every time. Sometimes, life, cats and little boys get in the way of the perfect cookie. But you know… I wouldn’t have it any other way.
