Coffee Cream Dacquoise

January 3rd, 2010

Do rum-soaked raisins sound like a wonderful addition to a butter cream filling? Then you simply must give these fabulous concoctions a try. They have a light meringue base for the cookie, and the coffee and rum flavored butter cream are simply marvelous.

Jelly Donut Madelines

October 22nd, 2009

Oh la la! These Jelly Donut Madelines are tre chic!

Seriously, they’re like little mini sponge cakes with a delicious raspberry center.

Done right, Macarons have a fabulously chewy texture (at least in my opinion.) All that chewy goodness coupled with a chocolaty ganache is just to die for. But then, if you go and add Nutella to the mix….!!

Palmiers

July 16th, 2009

Ooh, la la! These Palmiers are tre chic!
This is the perfect delicate cookie for a ladies luncheon or tea. If you’ve never tried one before, ~gasp!~ you’ve simply GOT to bake yourself a batch.
Yes, that’s right, I said bake the entire batch for yourself. You don’t have to eat them all in one sitting, but [...]

I’ll be the first to admit that these are a lot of work…. if done correctly. I’m not “a-lot-of-work” kinda gal. But I had to try these because frankly, I liked the name. “Little Jacks“. Doesn’t it sound like they just HAVE to taste good? Like they just don’t have a choice but to taste [...]

What’s The Difference?

May 25th, 2009

Oh, what a difference an “O” can make!
Macaroons and Macarons. What’s the difference? Aren’t they the same cookie?
I’ve heard those two questions a few times. And I’m here to tell you that one little “o” can make a world of difference in a cookie.
A Macaronis a French cookie, and is very different from a Macaroon. [...]

Well, as I predicted, these cookies are a tad bit more involved than most of us can handle. Now, I’m a pretty hardcore baker. I love to bake things that are way over my head, even if I’m just going to fail. Eventually, I get the gist of what needs to be done and I [...]

Chocolate Macaroon Cookies

December 30th, 2008

I typically don’t like a cookie recipe that calls for pre-mixed dough as one of the ingredients. I’m a “make it from scratch” kinda gal. But I’ve said it once, and I’ll say it again. I’m a bonafide cookie snob.
I do realize, that the simplicity of using pre-made dough is a staple for some folks [...]

French Madeleines

July 2nd, 2008

French Madeleines are some of my favorite cookies. I like them because they are almost like little miniture cakes. They have that spongey texture to them.
You can play around with the flavor of these cookies a bit by using different extracts. But for the most part, you will want to stick to the recipe on [...]
