
Well, I’ve finally tired of trying to reinvent the wheel…. sort of. I thought, this time, instead of trying to create my own cookie recipe from scratch, I’d try and adapt a recipe already floating around the Internet.
I found a good one! Not to sure the kids will like this, but they are really yummy for us grown-ups. After all, we need our kiddie-treats too, right?
So this recipe for Orange Cranberry Cinnamon Cookies With Macadamia Nuts was adapted from AllRecipes.com. Hope you enjoy them… I sure did.
Orange Cranberry Cinnamon Cookies With Macadamia Nuts
Ingredients – Dough
1 cup butter (softened)
1 cup white sugar
1/4 cup molasses
1 egg
Zest of one large orange
1 tsp. orange extract
2 1/2 cups white whole wheat flour
1 tsp. baking powder
1/2 tsp. salt
1 tsp. ground cinnamon
1 cup dried cranberries
1 cup macadamia nuts (coarsely chopped)
Ingredients – Glaze
1 cup powdered sugar
Orange zest (optional)
1/2 tsp. orange extract
1/4 tsp. cinnamon
Milk (About 1 tbsp. Enough to make the glaze “drizzly”. Adjust to your liking.)
Directions

Step 1 – Cream your butter and add the sugar and molasses. Blend.
Step 2 – Add your egg. Blend.
Step 3 – Add your orange extract and orange zest. Blend.
Step 4 – Make sure you have a shifty looking little helper with a crooked hat on waiting in the wings. The cookies will tasted better. I swear.

Step 5 – Mix flour, baking powder, cinnamon, and salt in a separate bowl. Mix well.
Step 6 – Add your wet mixture to your dry mixture and knead until well blended.

Step 7 – Add your cranberries and macadamia nuts. Mix again until you have a nice ball of dough.

Step 8 – ( I used a size 70 dough scoop for this) Roll small balls of dough between your hands and flatten to about 1/4 inch thickness. Place on a parchment lined cookie sheet and bake until just golden brown.
Step 9 – Mix all glaze ingredients in a bowl and drizzle over cookies. Allow time to dry.

Sure! It’s just a few photos set next to each other in photoshop and saved as one large photo. I hope that makes sense.

Tiffaney, take another look at your recipe, AllRecipes.com list baking soda and you have baking powder, is this intentional?

Yes, it was intentional. I simply didn’t have any baking soda in the house, so I used baking powder. My son managed to dump the entire container of baking soda all over my kitchen floor. So I made due with what I had. You are certainly welcome to use baking soda instead.
