Chocolate Almond Cookies

I have to admit, these are pretty darn good. They are made with Rum and Maple syrup. What a combination!

I don’t like to melt my chocolate in the microwave as the recipe suggests, because I find that it burns to easily and has a funny “flavor” to it when it’s done. So I melted mine in a double boiler.

I agree with the recipe, you really need to use the almond butter. It has a higher fat content, and makes the texture of the cookies much better than if using ground almonds.

As you can see, I dipped mine in chocolate when I was done. Yum!
