		<description>I would recommend the stuff from the store. However, I can&#039;t imagine that using fresh coconut would effect the shelf life any more than any other fresh ingredients in the recipe (butter / zest). They should have about the same shelf life. 

I asked the blogger who originally did this recipe, and she said she&#039;s never used fresh coconut. She can&#039;t get it in her corner of the world. So she didn&#039;t know if it would have an effect or not.

I know this isn&#039;t much help. I wish I had a more definitive answer. Perhaps somebody reading this will have some experience with baking with fresh coconut?

You can buy currents at any health food store in the bulk section. There may even be a few &quot;main stream&quot; stores that carry them.
