If you live in higher altitudes, no doubt you’ve had a few “flops” in the kitchen. Baking cookies is no exception.
Cookies baked at higher altitudes need recipe adjustments just like any other baked goodie. Without adjustments, your cookies can become rock hard pancakes in the oven.
While you may want to keep a few of those around the house in case somebody breaks into your house in the middle of the night (what? you’ve never heard of “death by chocolate cookies”?), chances are you’d rather have them turn out nice and soft and enjoyable when eaten.
This book, Pie in the Sky Successful Baking at High Altitudes: 100 Cakes, Pies, Cookies, Breads, and Pastries Home-tested for Baking at Sea Level, 3,000, 5,000, 7,000, and 10,000 feet (and Anywhere in Between) will do just that. There are tons of recipes for baking at different altitudes. It will give you a good idea of the adjustments you need to make in your own recipes, as well as giving you lots of recipes to try.
Just remember not to throw the good cookies at that burglar. He may not appreciate the sentiment.
Happy Baking!
